Well, this is what farming is all about - now that we are solidly into June, it feels like the whole farm grows by leaps and bounds right before our eyes! Everything is budding, flowering, fruiting, and growing at a magnificent pace, and we are so excited to share it with you. This week is the debut of our beets, and while that may not seem thrilling, I’d like to share why I think beets are such a wonderful food. If you are used to canned beets, over-cooked, or mealy beets, please put these examples to the side. We grow three amazing varieties that are crisp and fresh with a depth of flavor and truly stunning looks.
Our classic red beet is a variety called ‘Red Ace’, and it grows beautiful and consistent roots and greens. Our specialty beets are two heirloom varieties - ‘Chioggia Guardsmark’ and ‘Touchstone Gold’. Chioggia is an Italian variety known for its intriguing internal bullseye pattern, sliced into thin rounds it makes a crisp and alluring addition to salads. Touchstone is a golden orange beet - its color coming from high beta carotene levels - making it sweet and healthful. Beets are also related to swiss chard and spinach (also in your box this week!). This means that beet greens can be eaten and prepared just like their relatives. Don’t just toss the greens out, shred them, saute them, or juice them! I hope we’ve convinced you that beets are a beautiful, versatile, and tasty addition to our share, and we hope you enjoy them this week!
Another new arrival on the farm this week are sugar snap peas. These are the classic early season garden treat, and we hope you enjoy them while they are at the height of their season. Sugar snaps are sweet, tender, and delicious as a snack, fresh on a salad, or very lightly sauteed. You’ll also have spinach, cucumbers, and dill as new crops in the box. The summer is truly here, and we’re so glad to have more and more diversity in our boxes each week. We see green tomatoes on the vine, beautiful flowers on our squash and zucchini plants, and fruit on our peppers. We are so grateful and excited to share each week of new delights with you, and we hope you are all enjoying the journey.
